Peperonata is braised sweet peppers and onions and once you understand the technique, you can play around adding other veggies with new and equally delicious results. In this recipe you toss the peperonata with rigatoni for a quick meatless dinner. You can make the peperonata in advance or I have even made large batches and frozen it for quick winter meals. You may need to do some trading (check out our CSA trade box) to get the number of peppers you need or Aaron may have some available for sale this week or in the coming weeks.
