Week 1: Dairy Add-On Share

Von Trapp Farmstead is first up with the dairy add-on shares this year.

This week we are getting Mt. Alice.  This cheese is named after the peak southeast of the von Trapp farm on Common Road in Waitsfield.  The bloomy rind Camembert-style cheese is an elegantly smooth milky delight made from their organic pasteurized cows milk and aged for three to five weeks.

Grab a loaf of Green Rabbit Farm’s Levain and enjoy it with the Mt. Alice.  Be sure to let the cheese come to room temperature before eating – it will make all of the difference in the world!

After roasting the beets, you top them with thin slices of Mt. Alice (the recipe calls for Camembert) and then broil them until the cheese starts to toast.  What a great gluten-free appetizer!
